Cheese appetizer "Snowman"

Ingredients:

  • 220 g of cream cheese at room temperature
  • 1 tbsp Worcestershire sauce
  • 1.5 tsp grated lemon zest (1 lemon)
  • 5 cups grated white cheddar (450 g)
  • Fine salt
  • 1 small carrot
  • 2 asparagus spears, blanched
  • 3 black olives, halved
  • 1 12-inch strip of cucumber or celery, peeled with a vegetable peeler
  • Crackers, for serving
  • Special equipment: wooden skewer 15-20 cm long.

Preparation:

  1. In the bowl of a stand mixer, combine the cream cheese, Worcestershire sauce, lemon zest, 3 cups of cheddar, and 1 teaspoon of salt. Beat with the paddle attachment, scraping down the sides as needed. Transfer to a bowl, then cover with plastic wrap and refrigerate until completely set, about 30 minutes.
  2. Roll three balls of the cheese mixture to form the snowman's base, body, and head. They should be slightly larger than 10, 7, and 5 cm in diameter. Roll the balls in the remaining 2 cups of cheddar cheese to give them a snowy appearance. Insert a wooden skewer vertically into the largest ball; thread the body on top, then the head.
  3. Cut the pointed end of a carrot 2.5 cm long and attach it to the head to create a nose. Insert asparagus stalks for arms. Use two olive halves for eyes, and the remaining four for buttons. Wrap thinly sliced ​​cucumber or celery around the neck to create a scarf.
  4. Serve the snowman on a platter with crackers around it.
