Ingredients:
Chipotle Spice Mix
- 1 tbsp. sugar
- 2-3 tsp ground chipotle pepper
- 1 teaspoon ground coriander
- 1 tsp ground cumin
- 1 teaspoon freshly grated lime zest
- 1/4 tsp granulated garlic
Peanut
- 4 cups unsalted raw peanuts
- Protein of 1 large egg
- Vegetable oil to grease the baking sheet
Preparation:
- Chipotle Spice Mix:
Combine sugar, chipotle powder, coriander, cumin, lime zest, garlic and 1 1/2 teaspoons salt in a small bowl and set aside.
- Preheat oven to 175°C, lightly grease a baking sheet with vegetable oil.
- Place the egg white in a large bowl and whisk until foamy. Add the peanuts and stir to coat. Add the spice mixture and stir to coat.
- Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15-20 minutes. Let cool on the baking sheet, then transfer to a large bowl.
