Warm kohlrabi salad topcook.tomathouse.com
Ingredients:
- 1.3 kg kohlrabi, peeled and quartered (about 4 pcs.)
- 4 medium carrots
- 2 cloves of garlic
- 1/4 cup olive oil
- 1 liter of cherry tomatoes (preferably different colors)
- 4 green onions, thinly sliced
- 2 cups tightly packed parsley leaves
- 2 tablespoons lemon juice
Preparation:
- Grind kohlrabi, carrots and garlic in a food processor fitted with a grater attachment.
- Heat olive oil in a large skillet over high heat. Add the tomatoes, then the grated vegetables. Sauté for 3-5 minutes. Season with salt and pepper, then add the green onions, parsley, and lemon juice, stirring evenly. Simmer over low heat for 10-15 minutes.
