Sherry Vinaigrette with Shallots

Ingredients:

  • 1/4 cup sherry vinegar
  • 2 tbsp. l. chopped shallots
  • 3/4 cup extra-virgin olive oil

Preparation:

  1. In a small bowl, combine the vinegar, shallots, and a generous pinch of salt. Gradually whisk in the olive oil, starting with a few drops, then add the rest in a steady stream to create a smooth, slightly thick dressing. Add freshly ground black pepper (a couple of turns of the grinder).
