Potato salad "Niçoise"

Ingredients:

  • 900 g of fingerling potatoes
  • 2 cups green beans
  • 1 can (185 g) tuna
  • 1 cup parsley

Preparation:

  1. In a bowl, combine 1 cup finely chopped parsley, chives, and tarragon, 1/2 cup finely chopped shallots, 1/3 cup white wine, 1/4 cup olive oil, 2 tablespoons each white wine vinegar and Dijon mustard, and salt and black pepper to taste.
  2. Mix with 900 g of boiled halved fingerling potatoes, 2 cups of chopped green beans (boiled for 4 minutes), 1 can of tuna in oil (drained), and 0.5 cups of halved Kalamata olives.
