Grilled Mahi Mahi with Garlic Lime Butter topcook.tomathouse.com
Ingredients:
- 3 tablespoons extra-virgin olive oil, for greasing the grill grate
- 3 cloves garlic, crushed
- 1/3 cup lime juice
- 2 tablespoons chopped fresh coriander leaves + whole leaves for serving
- 4 fillets of mahi-mahi (korifena) 150-180 g each.
- Lime wedges and cooked white rice, for serving
Preparation:
- Preheat an outdoor grill to medium-high heat.
- In a small skillet over medium heat, heat the oil and garlic and cook, swirling occasionally, until softened, about 2 minutes. Remove from heat and transfer to a medium heatproof bowl. Add the lime juice, cilantro, and 1/2 teaspoon of salt, whisk to combine, and set aside.
- Generously season the mahi mahi with salt and black pepper. Lightly brush the grill grate with olive oil. Place the fish on the grill, convex side down, and cook until it releases easily from the grate, about 5 minutes. Carefully flip the fish and continue cooking until it is firm to the touch, another 5 minutes.
- Divide the fish among 4 plates and drizzle with the garlic-lime oil. Serve with lime wedges, cooked white rice, and the remaining sauce. Garnish with cilantro leaves.
