Ingredients:
- 3 1/4 cups all-purpose flour, plus extra for dusting pan (see Note)
- 2.5 tsp baking powder
- 2 tsp ground cinnamon
- 3/4 tsp baking soda
- 1/4 tsp ground allspice
- 1/4 teaspoon coarse salt
- A pinch of ground cloves
- 1 and 1/4 cups granulated sugar
- 1 tbsp. honey
- 3/4 cup vegetable oil
- 3/4 cup hot brewed coffee
- 1/4 cup freshly squeezed orange juice (from 1 orange)
- 2 tbsp whiskey (optional)
- 1 tsp vanilla extract
- 3 large eggs
- Powdered sugar, for dusting
- Special equipment: round cake pan with a hole in the center (12 cup capacity)
Preparation:
- Preheat oven to 350°F (175°C). Spray a cake pan with cooking spray and lightly dust with flour, making sure to coat all crevices. Shake out any excess flour and set the pan aside.
- In a large bowl, whisk together the flour, baking powder, cinnamon, baking soda, allspice, salt, and cloves. In another large bowl, whisk together the granulated sugar, honey, vegetable oil, coffee, orange juice, whiskey, vanilla extract, and eggs until smooth. Pour the wet mixture into the flour mixture and knead until smooth. Transfer the dough to the prepared pan.
- Bake until the cake is golden brown and a toothpick inserted into the center comes out clean, about 1 hour. Let cool in the pan for 15 minutes, then invert onto a wire rack and turn out to cool completely. If the cake is sticking to the pan, carefully run a small offset spatula around the edges of the cake and flip it over. Lightly dust with powdered sugar before serving.
Note When measuring flour, spoon it into a dry measuring cup and remove any excess. Scooping flour directly from the bag with a measuring cup will compact it, resulting in dry baked goods.
