Cheese-flavored corn chips

Ingredients:

    Cheese powder

  • 1/4 cup grated Pepper Jack cheese
  • 1/4 cup grated cheddar
  • 1/4 tbsp. grated parmesan

    Chips

  • 20 corn tortillas, cut in half
  • Vegetable oil, for deep-frying

Preparation:

  1. Cheese powder:

    Preheat oven to 80°C. Mix the cheeses and spread them on a baking sheet in a single, thin layer. Bake for 8 hours. The cheese will seem dry and a little greasy.Remove the baking sheet and pat dry with paper towels. Transfer the cheese to another clean baking sheet. Pat dry again if necessary.
  2. Bake until completely dry, another 2 hours. Remove the baking sheet from the oven and pat the cheese dry one last time. Let cool in a dry place.
  3. Place the cheese chips in a blender or spice grinder and grind into a powder. You'll have delicious cheese powder! Set aside.
  4. Corn chips:

    Heat 5 cm of vegetable oil in a deep frying pan to 190°C (375°F). Fry the tortillas, a few at a time, until golden brown, about 3 minutes per batch. Transfer to a wire rack to drain. Sprinkle the hot chips with cheese powder.

    Culinary advice


    You can mix the chips with other flavorings, such as chopped herbs, spices, or various cheeses. Just don't forget the cheese powder!
