Ingredients:
- 1 and 1/4 cups premium flour
- 1 teaspoon baking powder
- 0.5 tsp fine salt
- 1/4 teaspoon of baking soda
- 1/4 tsp ground cloves
- 110 g unsalted butter
- 170 g dark chocolate, finely chopped
- 2 large eggs
- 1 large egg yolk
- 1 cup light brown sugar
- 2 tsp vanilla extract
- 170 g semi-sweet chocolate granules
- 170 gr. white chocolate granules
Preparation:
- In a medium bowl, whisk together the flour, baking powder, salt, baking soda, and cloves. Melt the butter in a saucepan over medium heat. Remove from the heat and stir in the dark chocolate. Set aside to melt.
- In a medium bowl, whisk together the eggs, yolk, brown sugar, and vanilla extract, then slowly whisk in the melted chocolate mixture. Stir in the flour mixture and knead into a loose dough. Do not overmix. Fold in the chocolate chips.
- Cover with plastic wrap and refrigerate for 2 hours.
- Preheat oven to 175°C.
- Line a baking sheet with parchment paper. Form the dough into balls approximately 5 cm in size, or 45 g each, and place them on the prepared baking sheets, spacing them 5 cm apart.
- Bake until the outsides are cracked but the centers are still moist, about 13-15 minutes. Cool on a wire rack.
