Chocolate chip cookies

Ingredients:

  • 1 and 1/4 cups premium flour
  • 1 teaspoon baking powder
  • 0.5 tsp fine salt
  • 1/4 teaspoon of baking soda
  • 1/4 tsp ground cloves
  • 110 g unsalted butter
  • 170 g dark chocolate, finely chopped
  • 2 large eggs
  • 1 large egg yolk
  • 1 cup light brown sugar
  • 2 tsp vanilla extract
  • 170 g semi-sweet chocolate granules
  • 170 gr. white chocolate granules

Preparation:

  1. In a medium bowl, whisk together the flour, baking powder, salt, baking soda, and cloves. Melt the butter in a saucepan over medium heat. Remove from the heat and stir in the dark chocolate. Set aside to melt.
  2. In a medium bowl, whisk together the eggs, yolk, brown sugar, and vanilla extract, then slowly whisk in the melted chocolate mixture. Stir in the flour mixture and knead into a loose dough. Do not overmix. Fold in the chocolate chips.
  3. Cover with plastic wrap and refrigerate for 2 hours.
  4. Preheat oven to 175°C.
  5. Line a baking sheet with parchment paper. Form the dough into balls approximately 5 cm in size, or 45 g each, and place them on the prepared baking sheets, spacing them 5 cm apart.
  6. Bake until the outsides are cracked but the centers are still moist, about 13-15 minutes. Cool on a wire rack.
