Couscous with green peas and mint

Ingredients:

  • 200 g couscous
  • 0.5 cup frozen green peas, defrosted
  • 0.5 cup mint leaves, coarsely chopped
  • 2 tablespoons extra-virgin olive oil
  • Zest and juice of half a lemon
  • Crushed red pepper flakes, for serving

Preparation:

  1. Place the couscous and green peas in a large bowl and add 1.5 cups of boiling water. Stir to distribute the ingredients evenly, then cover with plastic wrap. Set aside and steam for 5 minutes.
  2. Remove the plastic wrap, fluff the couscous with a fork, and set aside to cool for about 10 minutes. Stir in the mint, olive oil, lemon zest and juice, 1 teaspoon salt, and 1/4 teaspoon black pepper. Season with salt and pepper to taste, if needed. Sprinkle with red pepper flakes.
