topcook.tomathouse.com

Ingredients:

  • 60 g unsalted butter, melted
  • 2 tablespoons firmly packed light brown sugar
  • 2 tablespoons natural maple syrup
  • 1 teaspoon pure vanilla extract
  • 0.5 tsp coarse salt
  • 1 and 3/4 cups rolled oats
  • 1 cup chopped walnuts
  • 1 cup freeze-dried bananas, crushed
  • 1/3 tbsp. semi-sweet chocolate granules
  • 0.5 cup dried strawberries, finely chopped
  • 1/4 cup dried pineapple, chopped

Preparation:

  1. Position a rack in the middle of the oven and preheat the oven to 325°F (160°C). In a large bowl, combine the butter, brown sugar, maple syrup, vanilla, and salt. Add the oats and walnuts and toss to coat evenly.
  2. Place on a rimmed baking sheet and spread evenly. Bake the oat mixture until golden brown, 30-35 minutes, stirring halfway through.
  3. Let cool completely on the baking sheet. Stir in bananas, chocolate, strawberries, and pineapple. The granola can be stored in a tightly sealed container at room temperature for up to 5 days.
