Ingredients:
- 4 cups fine arugula
- 1 fennel root, quartered and thinly sliced
- 1 cup grape tomatoes, halved
- 3 tablespoons extra-virgin olive oil
- Juice of 1 lemon
- 60 g salami, thinly sliced
- Grated Parmesan cheese, to sprinkle
Preparation:
- Combine arugula, fennel and tomatoes in a large bowl and season with salt and pepper to taste.
- Drizzle with olive oil and lemon juice and toss to coat. Top with salami and sprinkle with Parmesan.
