Lo mein without the hassle topcook.tomathouse.com
Ingredients:
- 450 g lo mein noodles or thin spaghetti, cooked until al dente
- 2 tbsp vegetable oil or wok oil
- 1 cup snow peas, halved diagonally
- 1 red bell pepper, seeded and cut into strips
- 220g assorted mushrooms (shiitake, straw mushrooms, winter mushrooms and oyster mushrooms), coarsely chopped if necessary
- 4 green onions, thinly sliced diagonally
- 2 cups fresh bean sprouts
- 5 cm ginger root, finely chopped or grated
- 4 cloves garlic, crushed
- 0.5 cup aged tamari sauce
- 1 tbsp dark sesame oil, a few drops
Preparation:
- Heat a wok or large nonstick skillet over high heat. When the pan is very hot, add the oil (it will smoke slightly), then immediately add the snow peas, peppers, mushrooms, green onions, and bean sprouts. Stir-fry for 1 minute to infuse the oil with flavor, then add the ginger and garlic and stir-fry for 2 minutes.
- Add the cooked noodles and toss to distribute the ingredients evenly. Add the tamari soy sauce and toss to coat the noodles evenly. Transfer the lo mein to a serving platter and drizzle with dark sesame oil.
