Fried shrimp in sweet and sour glaze topcook.tomathouse.com
Ingredients:
- 600 g medium shrimp, peeled, deveined and tailed
- 1/4 cup Chinese plum sauce
- 1/4 cup ketchup
- 2 teaspoons soy sauce
- 1/4 tsp crushed red pepper flakes
- 1 tbsp. l. peanut butter
- 2 green onions, thinly sliced (white parts separated from green parts)
- 1 clove garlic, finely chopped
- 1 tsp finely chopped peeled ginger root
- 3 tbsp. l. rice vinegar without salt
- Cooked white rice, for serving (optional)
Preparation:
- In a small bowl, combine plum sauce, ketchup, soy sauce and red pepper flakes and set aside.
- Season the shrimp with salt and black pepper. Heat the peanut oil in a medium skillet over medium-high heat. Add the shrimp and cook, stirring occasionally, until cooked through, 2-3 minutes. Transfer to a plate.
- Add the white part of the green onion, garlic, and ginger to the pan and cook, stirring constantly, until the onion is soft, about 1 minute. Add the vinegar and scrape up any browned bits from the bottom of the pan. Add the plum-ketchup sauce and bring to a simmer.
- Return the shrimp to the pan along with the green onions and stir. Divide among four plates and serve with white rice.
