Spaghetti in fresh tomato sauce in one pot

Ingredients:

  • 340 g spaghetti, broken in half
  • 3 tbsp. l. olive oil
  • 1 tbsp tomato paste
  • 4 cloves garlic, thinly sliced
  • 2 medium tomatoes, coarsely chopped
  • A handful of fresh basil leaves, plus extra for serving
  • A large pinch of red pepper flakes
  • 0.5 cup grated Parmesan + extra for serving

Preparation:

  1. Combine the spaghetti, olive oil, tomato paste, garlic, tomatoes, basil, red pepper flakes, and 1 teaspoon salt in a medium skillet with high sides. Add 5 cups of water and bring to a boil over medium-high heat. Continue cooking, stirring frequently to prevent the spaghetti from sticking, until al dente and the sauce has thickened, 6-8 minutes.
  2. Add the Parmesan (the sauce will thicken even more) and season with salt to taste, if needed. Divide the spaghetti among four plates and sprinkle with additional Parmesan and basil.
