Roasted Nuts with Maple Glaze

Ingredients:

  • 0.5 cup pecans
  • 0.5 cup almonds
  • 1/3 cup pistachios
  • 1/3 cup cashews
  • 1/3 cup pumpkin seeds
  • 1 tbsp. maple syrup
  • 0.5 tsp curry powder
  • 1/8 tsp cayenne pepper (or to taste)
  • 0.5 tsp dried rosemary
  • 1/4 teaspoon salt

Preparation:

  1. Preheat oven to 160°C.
  2. Combine the nuts and seeds in a medium bowl. Add the maple syrup, spices, and salt and stir to combine.
  3. Spray a baking sheet with cooking spray, then transfer the nuts to the baking sheet and spread them evenly in a single layer. Bake for 15-20 minutes, stirring once, until the nuts are toasted and fragrant.
