Chinese Smashed Cucumber Salad topcook.tomathouse.com
Ingredients:
- 450 g of cucumbers
- 1 teaspoon coarse salt
- 1 tbsp soy sauce
- 1 tbsp. Chinese black vinegar
- 2 tsp. dark sesame oil
- 1 teaspoon of sugar
- 0.5 tsp crushed red pepper flakes
- Toasted sesame seeds and coriander leaves, for serving
Preparation:
- Place the cucumbers in a zip-lock plastic bag. Seal the bag and lightly crush them with the palm of your hand. Remove the cucumbers from the bag and cut into 2 cm pieces. Place in a bowl and season with salt. Toss to coat.
- In a medium bowl, combine the soy sauce, vinegar, sesame oil, sugar, and chili flakes. Whisk to dissolve the sugar.
- Add cucumbers, stir and sprinkle with toasted sesame seeds and cilantro.
