New Year's dessert made from cranberry jelly topcook.tomathouse.com
Ingredients:
- 3 x 85g packages of cranberry jelly mix
- 2 x 400g jars of cranberry sauce with whole berries
- 1 can (220 g) canned pineapple chunks, drained
- 220 g of cream cheese, room temperature
- 1/4 cup powdered sugar
- 1/4 cup whole milk
- 1 orange
Preparation:
- Pour 2 cups of water into a saucepan and bring to a boil, then remove from heat. Stir in the jelly mixture until completely dissolved, 1-2 minutes. Add 1 cup of cold water, cranberry sauce, and pineapple. Stir well, making sure to break up any large chunks of cranberry sauce. Pour into a 22x32 cm mold. Cover and refrigerate until set, about 3.5-4 hours.
- Using a hand mixer, beat the cream cheese and powdered sugar until smooth, about 1 minute. Add the milk and mix. The frosting should be thick but still pourable. Carefully spoon the cream cheese frosting in a thin layer over the set cranberry sauce. Grate the orange zest directly onto the frosting. Serve cut into squares.
