Ingredients:
- 220 g dry gemelli pasta
- 1/3 cup olive oil
- 2 tablespoons white wine vinegar
- 1/8 tsp crushed red pepper flakes
- 1 small shallot, chopped
- 110 g ham, cut into thin strips
- 1 cup halved grape tomatoes
- 0.5 cups thinly sliced celery
- 0.5 cup torn fresh basil leaves
- 1/2 cup peeled and chopped pickled pepperoncini peppers
- 1 tbsp chopped fresh oregano
Preparation:
- In a large saucepan, bring salted water to a boil.
- In a large bowl, combine the olive oil, vinegar, red pepper flakes, shallot, 1/2 teaspoon salt, and a few grinds of freshly ground black pepper.
- Place the pasta in boiling water and cook according to package directions. Drain and rinse the pasta under cold water to cool. Transfer to a bowl with the dressing.
- Add the ham, tomatoes, celery, basil, pepperoncini, and oregano to a bowl and toss. Season with salt and pepper to taste. The pasta salad is best served immediately.
