Watermelon salad with halloumi cheese

Ingredients:

  • 280g halloumi cheese, cut into 2.5cm cubes.
  • 1/2 of a small seedless cucumber, diced (about 6 cups)
  • 6 tender inner celery stalks with leaves, thinly sliced
  • 3 tablespoons balsamic vinegar
  • 3 tbsp. l. olive oil
  • Vegetable oil, for frying

Preparation:

  1. In a small saucepan, heat 2.5 cm of vegetable oil to 175°C (350°F) and fry the cheese, turning frequently, until golden brown, 30-45 seconds. Transfer to paper towels to drain excess oil.
  2. Just before serving, combine the fried cheese with the watermelon and celery in a large bowl. Drizzle with balsamic vinegar and olive oil.
