Ingredients:
- 2 cups of oatmeal with bran
- 1 cup Greek yogurt, 2% fat
- 2 tbsp. maple syrup
- 1 tsp matcha powder + extra for sprinkling
- 4 tbsp dry roasted unsalted pistachios, finely chopped
- 1 Granny Smith apple, sliced into strips
Preparation:
- In a medium saucepan, combine 3.5 cups water and 0.5 teaspoon salt and bring to a boil. Reduce heat to medium and stir in the oats. Cook, stirring frequently, until tender, 5-6 minutes. Remove from heat, cover, and let simmer until slightly thickened, about 2 minutes.
- In a small bowl, combine yogurt, 1 tablespoon maple syrup, and matcha until smooth. Set aside.
- Divide the oatmeal among four bowls and top each with 1/4 cup matcha-flavored yogurt. Sprinkle with chopped pistachios and drizzle with the remaining maple syrup. Garnish each serving with apple slices and matcha powder.
