Caprese appetizer on skewers topcook.tomathouse.com
Ingredients:
- 450 g of bocconcini mozzarella
- 450 g cherry tomatoes
- 1/4 cup olive oil + extra for drizzling
- 3/4 tsp salt
- 0.5 tsp red pepper flakes
- 1 bunch of fresh basil
- Half a large baguette, cut into 2cm thick slices.
- Special equipment: long wooden skewers soaked in water
Preparation:
- Preheat grill to medium heat.
- In a large bowl, combine the bocconcini mozzarella, cherry tomatoes, olive oil, salt, red pepper, and a pinch of black pepper. Toss to distribute evenly and coat with oil.
- Place on skewers:
Thread the basil, tomato, mozzarella, and bread onto long wooden skewers; repeat in the same order. Place the skewers on a baking sheet and drizzle the bread with olive oil. Let it sit for 5 minutes to soak, then drain off any excess oil.
- Grill the kebabs, turning constantly, until the cheese is heated through and the bread is toasted, 2 to 3 minutes. Serve immediately.
