Caprese appetizer on skewers

Ingredients:

  • 450 g of bocconcini mozzarella
  • 450 g cherry tomatoes
  • 1/4 cup olive oil + extra for drizzling
  • 3/4 tsp salt
  • 0.5 tsp red pepper flakes
  • 1 bunch of fresh basil
  • Half a large baguette, cut into 2cm thick slices.
  • Special equipment: long wooden skewers soaked in water

Preparation:

  1. Preheat grill to medium heat.
  2. In a large bowl, combine the bocconcini mozzarella, cherry tomatoes, olive oil, salt, red pepper, and a pinch of black pepper. Toss to distribute evenly and coat with oil.
  3. Place on skewers:

    Thread the basil, tomato, mozzarella, and bread onto long wooden skewers; repeat in the same order. Place the skewers on a baking sheet and drizzle the bread with olive oil. Let it sit for 5 minutes to soak, then drain off any excess oil.
  4. Grill the kebabs, turning constantly, until the cheese is heated through and the bread is toasted, 2 to 3 minutes. Serve immediately.
