Basic pancake batter

Ingredients:

  • 1.5 cups premium flour
  • 0.5 tsp salt
  • 2.5 tsp baking powder
  • 1 egg
  • About 1 cup of milk
  • 3 tbsp butter, melted and cooled, plus extra for frying
  • Softened butter, for serving
  • Maple syrup, room temperature, for serving

Preparation:

  1. Heat a griddle or griddle over high heat. Sift together the flour, salt, and baking powder. Whisk together the egg, milk, and butter. Add the egg mixture to the flour mixture and stir just to moisten. The dough will be lumpy, so don't overmix it. If it's too dry, add a few more tablespoons of milk.
  2. Reduce heat to medium-high and lightly grease a skillet with butter. Pour batter into the skillet, about 1/4 cup per 4-inch (10 cm) pancake. Cook until the edges are dry and small bubbles appear on the surface, about 2 minutes.
  3. Flip the pancakes and cook on the other side until lightly browned. Transfer the pancakes to warm plates as they cook and serve immediately with butter and maple syrup.
