Spaghetti is one of the most popular and delicious Italian dishes, widely known in our country. The sauce, of course, is what gives spaghetti its specialty. These days, you can buy ready-made sauce at any supermarket, but its taste will never compare to something you make yourself.

There are many options for making sauce, so we'll look at the simplest, most delicious, and most popular recipes.

Bolognese sauce

To prepare you will need:

  • 400 g boneless beef
  • One onion
  • Two stalks of celery
  • One carrot
  • 50 g butter
  • 300 g of tomatoes (preferably canned in their own juice and without the skin)
  • 150-300 ml of water (preferably vegetable broth)
  • 100-125 ml of wine (dry red)
  • 50 ml olive oil
  • Bay leaf
  • Herbs to taste (for example, rosemary and thyme)
  • Spices to taste
  • A couple of cloves of garlic

Method of preparation:

Wash the beef, cut into pieces, and mince. Chop the onion, carrot, and celery, and mince the garlic. Mix the olive oil with the butter and heat in a saucepan. Then add the chopped vegetables and simmer for 5-10 minutes. Add the ground meat, wine, and spices, stirring over medium heat until all the liquid has evaporated. Then add the tomatoes and herbs to the saucepan and cover with water (or broth). Add the bay leaf 10 minutes before the dish is fully cooked. Cook the resulting sauce, covered, for 35-45 minutes.

Pesto sauce

To prepare you will need:

  • 100g of arugula
  • 50gr. Parmesan cheese
  • 50 g of pine nuts
  • A couple of cloves of garlic
  • A couple of sprigs of dill
  • A couple of sprigs of parsley
  • Olive oil

Method of preparation:

Wash the arugula in a blender and puree it with dill and parsley. Add the garlic, pine nuts, and olive oil to the grated cheese. Blend until smooth. If not used immediately, the sauce can be stored for up to a week in a tightly sealed jar.

If you're feeling adventurous, you can deviate from the traditional recipe. When making pesto sauce, you can use any herbs you like: green basil, parsley, cilantro, spinach, or wild garlic.

Mushroom sauce

Ingredients:

  • 150 g of champignons
  • Ten asparagus stalks
  • 300 ml of water (preferably vegetable broth)
  • 50 g frozen green peas
  • One onion
  • One bunch of greens to taste
  • Spices
  • Olive oil

Method of preparation:

Peel the onion, cut it into small cubes, and fry it lightly in olive oil. Rinse the mushrooms, cut them into pieces, and add them to the pan. Season the mushrooms with spices to taste and let them simmer over open heat until all the liquid has evaporated. Then add the water (stock), asparagus (washed and cut into pieces), and peas. Bring the resulting sauce to a boil and simmer for 12-15 minutes.

Tomato sauce

To prepare you will need:

  • One can of tomatoes (preferably canned in their own juice and without the skin)
  • One onion
  • One carrot
  • A couple of sprigs of basil
  • Two stalks of celery
  • Two cloves of garlic
  • Half a glass of water
  • 4 tablespoons of olive oil
  • A quarter teaspoon of sugar
  • Black pepper
  • Salt

Method of preparation:

Peel and chop the onion. Wash and grate the carrots. Chop the garlic and celery. Pour olive oil into a preheated frying pan and lightly fry the onion and carrot. Add the tomatoes, celery, and garlic. Cover with water, add sugar, black pepper, and salt to taste. Once the sauce comes to a boil, simmer for 20 minutes, covered. When the sauce is ready, puree it in a blender and add the basil leaves.

Cheese sauce

To prepare you will need:

  • One glass of cream
  • 400g of cheese

Method of preparation:

Heat the cream in a frying pan and add the grated cheese. Mix thoroughly until smooth. You can use more than one type of cheese, depending on your taste.
