Healthy Peanut Butter Truffles topcook.tomathouse.com
Ingredients:
- 3 cups of bran-raisin breakfast cereal
- 1 cup puffed brown rice (breakfast cereal)
- 2/3 cup natural creamy peanut butter
- 5 tablespoons maple syrup
- 3 tablespoons dried cherries
- 0.5 cup freeze-dried bananas or 1/4 cup sugar-free cocoa powder, for coating (optional)
Preparation:
- Combine the cereal, peanut butter, maple syrup, cherries, and 1 tablespoon of water in a food processor and pulse until the mixture is finely chopped and forms a large ball. Roll into a small ball; if it seems too dry and crumbly, add another 1 tablespoon of water.
- Take 1 heaping tablespoon of the mixture, roll it into a smooth ball, and repeat with the remaining mixture. Wet your hands slightly with water to make it easier to work with.
- If you are using freeze-dried bananas, blend them in a food processor until finely ground. Place them in a small bowl. Roll each truffle in the banana powder to coat completely. Store candies in an airtight container at room temperature for up to 2 days..
If you use cocoa powder, pour it into a small bowl and roll each candy to coat completely.
