Rice with smoked sausages topcook.tomathouse.com
Ingredients:
- 2 cups long-grain white rice
- 5 cups chicken broth, divided
- 2 tablespoons of vegetable oil
- 450 g smoked pork sausages, thinly sliced
- 1 clove garlic, minced
- 1 large onion, chopped
- 1 stalk celery, chopped
- 1 medium green bell pepper, chopped
- 200 g frozen green beans
- 1/4 tsp cayenne pepper
- Half a hot pepper (optional)
- 1/4 cup chopped fresh parsley leaves
Preparation:
- Cook the riceIn a medium saucepan, combine the rice and chicken broth. Bring to a boil, reduce heat, and simmer until the rice has absorbed all the broth, about 20 minutes.
- Meanwhile, heat the vegetable oil in a heavy-bottomed skillet over medium-high heat. Brown the sausage. Once browned, add the garlic, onion, celery, green beans, and bell pepper and hot pepper (if using). Cook until softened, about 5 minutes. Season with salt and pepper.
- Add 1 cup of chicken broth and cayenne pepper. Cook until the broth has reduced slightly. Add cooked rice and parsley and stir thoroughly. Taste and season with salt and pepper if needed.
