Ingredients:
- 1 cup of sugar
- 6 tbsp. premium flour
- 2 cups grated sharp cheddar
- 2 cans of 560g canned pineapple chunks, drain the liquid and set aside 6 tbsp.
- 1 cup crushed crackers (recommended: Ritz)
- 110g melted butter + extra for greasing the pan
Preparation:
- Preheat oven to 175°C.
- Grease a medium casserole with butter.
- In a large bowl, combine the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks and stir to distribute evenly. Pour the mixture into the prepared pan.
- In a medium bowl, combine crushed graham crackers, melted butter, and the reserved pineapple syrup. Stir with a rubber spatula. Spoon the graham cracker mixture over the pineapple mixture. Bake for 25-30 minutes or until golden brown.
