Red grape gazpacho topcook.tomathouse.com
Ingredients:
- 2 cups seedless red grapes
- 1.5 cups chopped peeled seedless cucumber (3 pcs.)
- 1 1/2 cups cubed baguette or country bread, crusts removed
- 3 tbsp extra-virgin olive oil + extra for drizzling
- 1 tbsp + 1 tsp red wine vinegar
- Half a small clove of garlic
- Crushed pink pepper, for serving
Preparation:
- In a blender, blend the grapes, cucumber, bread, olive oil, 2 tablespoons of water, vinegar, garlic, and 1 teaspoon of salt until smooth, at least 1 minute. Refrigerate until completely chilled, at least 30 minutes.
- Season the gazpacho with salt to taste. Ladle into small bowls. Drizzle with olive oil and sprinkle with crushed pink pepper.
