Green peas with prosciutto

Ingredients:

  • 2 tbsp. l. olive oil
  • 3 shallots, chopped
  • 2 cloves garlic, crushed
  • 1 bag (450 g) frozen green peas, thawed
  • 110 g prosciutto (0.3 cm thick slices), cut into cubes
  • 1/4 cup chopped fresh Italian parsley leaves

Preparation:

  1. Heat olive oil in a large, heavy-bottomed skillet over medium-low heat. Add the shallot, garlic, salt, and black pepper and cook until softened, about 1 minute.
  2. Add the green peas and cook for about 5 minutes. Add the prosciutto and cook for 1-2 minutes. Stir in the parsley and remove from the heat. Season with salt and pepper to taste and serve.
