Grilled Mahi Mahi with Mojo Sauce topcook.tomathouse.com
Ingredients:
- 2 mahi-mahi fillets, weighing 150-170 g each.
- 2 cloves garlic, chopped
- 2 tbsp olive oil + extra for greasing
- 1/4 cup lime juice (about 2 limes)
- 0.5 tsp coarse salt
- 2 tablespoons chopped fresh cilantro leaves + 2 sprigs for garnish
- Extra-virgin olive oil
- Salad greens, for serving
Preparation:
- Combine the garlic and olive oil in a small microwave-safe bowl, cover with plastic wrap, and microwave on high until the garlic is soft and fragrant, 1-2 minutes. Alternatively, heat the oil and garlic in a small saucepan over medium heat until the garlic is softened. Add the lime juice, cilantro leaves, and salt. Set aside until ready to serve.
- Preheat the grill to medium-high heat. Brush the mahi mahi fillets with olive oil and season generously with salt and pepper. Place the fish, rounded side down, on the grill and grill until it releases easily, about 5 minutes (check by gently lifting a corner—if it's sticking, grill a little longer). Carefully flip the fish and grill until firm, about 5 more minutes.
- Arrange the greens on two plates. Place the fish on the bed of greens and brush with mojo sauce. Garnish with cilantro sprigs and serve with the sauce.
