Ingredients:
- 0.8 kg of ground pork (not lean)
- 1 small onion, grated and squeezed
- 4 cloves garlic, finely grated
- 2 tablespoons chopped fresh sage
- 1 tbsp chopped fresh thyme
- 3 tablespoons maple syrup
- 1 tbsp paprika
- 0.5 tsp ground allspice
- 0.5 tsp ground coriander
- 1/4 tsp cayenne pepper
- 2 tbsp. l. olive oil
Preparation:
- In a bowl, combine the ground pork, onion, garlic, sage, thyme, maple syrup, paprika, allspice, coriander, cayenne pepper, 2.5 teaspoons salt, and 1/2 teaspoon black pepper and mix with your hands. Form into 18 patties, 2 inches wide and 0.5 inches thick; place on a foil-lined baking sheet, cover, and refrigerate overnight.
- The next day, preheat the oven to 350°F (175°C). Heat 1 tablespoon of olive oil in a skillet over medium heat. Fry half the patties, turning once, until golden brown, about 5 minutes. Transfer to a baking sheet. Wipe out the skillet.
- Repeat with the remaining 1 tablespoon olive oil and the patties, then transfer the patties to the oven and bake for 5-10 minutes.
