Grilled Corn on the Cob with Spicy Butter and Cilantro

Ingredients:

  • 4 ears of corn, husked
  • 3 tablespoons unsalted butter, room temperature
  • 2 tbsp chopped fresh cilantro
  • 1 tsp grated lime zest + wedges for serving
  • 1 red jalapeño, seeded and finely chopped

Preparation:

  1. Preheat a grill or grill pan over medium-high heat. In a small bowl, combine the butter, cilantro, lime zest, jalapeño, 1/2 teaspoon salt, and a small amount of black pepper, mixing until evenly distributed.
  2. Grill the corn, turning occasionally, until lightly charred and tender, 10-15 minutes. Transfer to a platter and brush with herb oil. Squeeze lime wedges over the top.
