Chilled cucumber salad topcook.tomathouse.com
Ingredients:
- 5 small cucumbers, sliced into rounds (5 cups)
- 1 cup white vinegar
- 1.5 cups of sugar
- 1 teaspoon celery seeds
- 1/4 cup vegetable oil
- 1 medium sweet onion, thinly sliced
- 1 large red or yellow bell pepper, thinly sliced
Preparation:
- In a medium saucepan, bring the vinegar, sugar, celery seed, vegetable oil and 1 teaspoon salt to a boil over high heat, then remove the saucepan from the heat and let the mixture cool for 20 minutes.
- In a large bowl, combine the sliced cucumbers, onions, and bell peppers with the marinade and refrigerate overnight. Serve the salad cold.
Note
Before slicing cucumbers, prick the skin with a fork, but don't peel them. If possible, try Kirby or Iranian cucumbers. They're smaller than regular cucumbers and very crisp and delicious. Perfect for salads!
