Tostadas with ground beef and mango

Ingredients:

  • 0.6 kg ground beef
  • 1 mango, diced
  • Half a small red onion, finely chopped
  • 1/4 cup chopped fresh cilantro, plus extra for serving
  • Juice of 1 lime + wedges for serving
  • 1 tbsp. vegetable oil
  • 1 can (425 g) canned chopped roasted tomatoes with chili peppers
  • 0.5 - 1 tsp ancho chili powder + extra for sprinkling
  • 8 corn tostadas
  • Shredded iceberg lettuce, for serving
  • 2/3 cup sour cream

Preparation:

  1. In a medium bowl, combine mango, red onion, cilantro, lime juice, 1/4 teaspoon salt and a few grinds of black pepper.
  2. Heat vegetable oil in a large nonstick skillet over medium-high heat. Add the ground beef and cook, stirring occasionally, until browned, about 2 minutes. Add the tomatoes, chili powder, and 3/4 teaspoon salt. Continue cooking until the beef is cooked through and the sauce has reduced slightly, about 2 minutes.
  3. Divide the fried ground beef among the tostadas; top with lettuce leaves, mango salsa, sour cream, and cilantro. Sprinkle with chili powder, if desired. Serve with lime wedges.
