Turkey chops with grilled plum salad topcook.tomathouse.com
Ingredients:
- 0.7 kg turkey fillet
- A pinch of cayenne pepper
- 1 and 1/4 teaspoons ground coriander
- 5 tbsp. l. olive oil
- 3 firm plums, cut into 2cm thick slices.
- 2 tsp freshly squeezed lemon juice
- 8 cups arugula
Preparation:
- Preheat grill to medium-high heat.
Place the fillets, one at a time, between two sheets of plastic wrap and pound with a meat mallet or a heavy skillet until 1/4 inch thick. Transfer the chops to a bowl and toss with the cayenne pepper, 1 teaspoon coriander, 1 teaspoon salt, 1/4 teaspoon black pepper, and 1 tablespoon olive oil.
- Toss the plums with the remaining 1/4 teaspoon cilantro, a pinch of salt, and 1 tablespoon olive oil. Grill the plums, turning once, until just beginning to soften, 3 to 4 minutes.
- Grill the turkey until cooked through, about 2 minutes per side.
- Finely chop a few wedges of roasted plums and place them in a large bowl. Stir in the lemon juice, the remaining 3 tablespoons of olive oil, and 1/4 teaspoon each of salt and black pepper. Add the arugula and toss to combine. Top the turkey with the lettuce and remaining roasted plums.
